  • 2 pounds russet or Yukon Gold potatoes, peeled and thinly sliced
  • 2 cups diced cooked ham
  • 1 can condensed cream of mushroom soup (10.5 ounce)
  • 1 cup whole milk or 2 percent milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon unsalted butter or cooking spray (optional) Use for greasing the slow cooker

Method
 

Preparation
  1. Lightly grease the inside of a slow cooker.
  2. Peel and slice the potatoes.
  3. In a bowl, whisk together the cream of mushroom soup, milk, salt, and pepper.
  4. Layer half of the potatoes and half of the ham in the slow cooker.
  5. Repeat with the remaining potatoes and ham, then pour the sauce over the top.
Cooking
  1. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours until tender.
  2. Let sit, covered, for 10 to 15 minutes before serving.

Notes

For best texture, slice potatoes evenly. For richer flavor, use heavy cream instead of milk. Can add cheese like cheddar for extra creaminess. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
