Ingredients

Main ingredients
  • 3 pounds russet potatoes, scrubbed well (peeled if you prefer)
  • 1 can (10.5-ounce) condensed cream of chicken soup Can substitute with cream of mushroom or a vegetarian equivalent.
  • 1/2 cup unsalted butter, melted 1 stick
  • 2 tablespoons dry ranch dressing mix

Method

Preparation
  1. Prepare the potatoes by scrubbing them well under cool running water. Peel if preferred.
  2. Cut the potatoes accordion-style using a sharp knife, slicing into thin cuts without cutting all the way through.
  3. Lightly grease the bottom and sides of a slow cooker.
  4. Arrange the accordion-cut potatoes in a single snug layer in the slow cooker.
Cooking
  1. In a medium bowl, whisk together the condensed cream of chicken soup, melted butter, and dry ranch dressing mix until smooth.
  2. Pour the mixture evenly over the potatoes, ensuring it seeps into the cuts.
  3. Cover and cook on LOW for 5 to 6 hours or on HIGH for 3 to 3.5 hours until tender.
  4. Gently stir the sauce before serving and spoon the potatoes onto plates, ladling some sauce over each serving.

Notes

Serve these potatoes as a side dish with your favorite meats, garnished with fresh herbs. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove over low heat, adding moisture if necessary. You can customize the dish by adding cheese towards the end of cooking.
