  • 8 oz Elbow macaroni Cooked until tender
  • 1 cup Mayonnaise
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Granulated sugar
  • 1 tbsp Yellow mustard
  • 4 large Hard-boiled eggs Chopped
  • 1 cup Celery Diced
  • 1/2 cup Onion Finely diced
  • 1 cup Red bell pepper Chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Method
 

Preparation
  1. Cook the elbow macaroni according to package instructions until tender. Drain and let cool.
  2. In a large bowl, combine mayonnaise, apple cider vinegar, granulated sugar, yellow mustard, salt, and black pepper to create the dressing.
  3. Once the macaroni is cooled, add it to the dressing along with chopped hard-boiled eggs, diced celery, finely diced onion, and chopped red bell pepper.
  4. Mix everything together until well combined.
  5. Chill in the refrigerator for at least an hour before serving to let the flavors meld.

Notes

For a creamier texture, add extra mayonnaise or a splash of milk. Experiment with vegetables like sweet peas or carrots. Make sure the macaroni is fully cooled before mixing to prevent sogginess. You can also add diced pickles or bacon for extra flavor.
