  • 1 large sweet onion, thinly sliced and chopped into small pieces
  • 2 cups shredded Swiss cheese Cheddar or a mix of cheeses can be used for variation.
  • 3 tablespoons unsalted butter, melted Brushing melted butter helps achieve a crispy texture.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Line a large baking sheet or shallow baking pan with parchment paper and lightly brush it with some of the melted butter.
  3. Arrange the potato rounds in a single layer on the prepared pan.
  4. Brush the tops of the potatoes lightly with the remaining melted butter.
  5. Scatter a small spoonful of chopped onion over each potato round.
  6. Top each round with shredded Swiss cheese.
Baking
  1. Bake for 22-28 minutes, until the potatoes are fork-tender, the onions are softened and lightly browned, and the cheese is melted and bubbly with golden spots.
  2. Let the bites rest for 3-5 minutes.
  3. Transfer to a serving dish and serve warm.

Notes

Serve these potato bites warm as an appetizer or snack. They go well with sour cream or fresh herbs. Store leftovers in an airtight container for up to 3 days and reheat at 350°F for about 10 minutes.
