Ingredients

Main Ingredients
  • 1 bag (19–20 oz) frozen cheese tortellini You can use fresh tortellini but reduce cooking time.
  • 1 jar (22–24 oz) Alfredo sauce
  • 2 cups low-sodium chicken broth (or vegetable broth) To make it vegetarian, use vegetable broth.
  • 2 cups shredded Italian blend cheese (or mozzarella) Experiment with different cheese blends for flavor.

Method

Preparation
  1. Lightly grease the inside of a 4- to 6-quart slow cooker with cooking spray or a thin swipe of oil.
  2. Pour the Alfredo sauce into the slow cooker. Add the chicken broth and stir until smooth.
  3. Add the frozen cheese tortellini and stir to coat.
  4. Sprinkle 1 1/2 cups of shredded cheese on top without stirring.
Cooking
  1. Cover and cook on LOW for 3 to 4 hours until tortellini are plump and tender.
  2. Stir to combine the melted cheese with the sauce. If the sauce is thin, cook on LOW for another 10 to 15 minutes without the lid.
  3. Sprinkle the remaining cheese on top, cover, and let sit on LOW or WARM for 5 to 10 minutes.
Serving
  1. Serve directly from the slow cooker. Enjoy it hot and creamy, paired with a garden salad or crusty bread.

Notes

For added flavor, consider adding cooked chicken, broccoli, or spinach. Leftovers can be stored in the refrigerator for up to 3 days.
