Preparation
- Place the chicken breasts in the bottom of the slow cooker in an even layer.
- Sprinkle the taco seasoning evenly over the top.
- Pour the salsa over everything, making sure the chicken is well coated.
Cooking
- Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the chicken is fully cooked and tender enough to pull apart easily with two forks.
- Shred the chicken directly in the slow cooker with two forks, stirring it into the salsa so the meat absorbs the juices.
- Sprinkle the shredded cheddar cheese over the hot chicken mixture.
- Cover again for 5 to 10 minutes, just until the cheese melts.
- Stir lightly if you want the cheese distributed throughout, or leave it on top for a gooier finish.
- Serve warm.
Notes
To store leftovers, let the chicken cool completely, then transfer it to an airtight container. It can be kept in the refrigerator for up to 3 to 4 days or frozen in a freezer-safe container for up to 2 months.
