Ingredients

Main Ingredients
  • 2 cups dry elbow macaroni
  • 2 cups chicken broth Can be substituted with vegetable broth for a vegetarian option.
  • 8 ounces cream cheese, cubed
  • 2 cups shredded cheddar cheese Feel free to experiment with different cheese types.

Method

Preparation
  1. Lightly coat the slow cooker with nonstick spray or butter if desired.
  2. Add the dry elbow macaroni, chicken broth, cubed cream cheese, and shredded cheddar cheese to the slow cooker.
  3. Stir gently to ensure the macaroni is coated and the cream cheese is tucked into the liquid.
Cooking
  1. Cover and cook on LOW for 1.5 to 2.5 hours, stirring once or twice. Start checking the pasta around 1.5 hours.
  2. Once the macaroni is tender, stir thoroughly until the cream cheese and cheddar create a smooth, creamy sauce.
  3. If the sauce is too thick, add a splash of hot broth or water to loosen it.
  4. Let the dish rest for about 5 minutes, then serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for about 3 to 5 days. To reheat, warm in the microwave or on the stove with a little milk or broth.
