Main Ingredients
  • 3 pounds russet potatoes, peeled and thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
Seasoning
  • 1/2 teaspoon salt (optional)
  • 1/2 teaspoon black pepper (optional)
For Greasing
  • Nonstick cooking spray or butter For greasing the slow cooker

Method
 

Preparation
  1. Lightly grease the inside of the slow cooker.
  2. Peel and slice the potatoes into thin rounds. If you slice them ahead of time, keep them in cold water to prevent browning.
  3. In a bowl, stir together the cream of chicken soup and sour cream until smooth. Add salt and pepper if you like.
Layering and Cooking
  1. Layer half of the potatoes in the slow cooker, then add half of the sauce mixture, and sprinkle half the cheese.
  2. Repeat with the remaining potatoes, sauce, and cheese.
  3. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until the potatoes are tender.
  4. Let the dish rest for 10–15 minutes on the WARM setting before serving.

Notes

Make sure to slice your potatoes evenly for consistent cooking. Experiment with different types of cheese for a unique flavor. Add some chopped green onions or crispy bacon bits for extra taste and presentation.
