3-Ingredient Fried Cornmeal Mush

  • 1 cup yellow cornmeal
  • 3 cups water, divided 1 cup for mixing, 2 cups for boiling
  • 1 teaspoon salt To taste
  • Oil or bacon grease, for frying Enough to cover the bottom of the pan

Method
 

Preparation
  1. Lightly grease a loaf pan or small square baking dish and set it aside.
  2. In a small bowl, whisk together the cornmeal with 1 cup of the water until smooth.
  3. In a medium saucepan, bring the remaining 2 cups of water and the salt to a gentle boil over medium heat.
  4. Slowly pour the cornmeal mixture into the boiling water while whisking constantly.
  5. Reduce the heat to low and cook, stirring frequently, until very thick, about 10–15 minutes.
  6. Transfer to the prepared pan and let it cool. Then refrigerate for at least 4 hours or overnight.
Cooking
  1. When ready, remove from the fridge, slice into squares, and fry in hot oil until golden brown, about 3–5 minutes per side.
  2. Drain and serve immediately.

Notes

Make sure to whisk the cornmeal mixture well to avoid lumps. Cook the mush slowly to achieve the right texture. Let the mush cool completely before refrigerating for the best results. Use enough oil in the pan to achieve a nice crispy exterior.
