Preparation
- Line a small tray or plate that fits in your freezer with parchment paper.
- Slice the bananas into even rounds, about 1/2 inch thick.
- Spread a small amount of peanut butter onto half of the banana slices, then top each with another banana slice to make little sandwiches.
- Place the tray in the freezer for 20 to 30 minutes, until the bites are firm.
Coating
- Melt the dark chocolate in a microwave-safe bowl in short intervals, stirring between each, or use a heatproof bowl set over barely simmering water. Stir until smooth.
- Dip each frozen banana sandwich into the melted chocolate, turning to coat as much as you like, then return it to the parchment-lined tray.
- Freeze the coated bites for another 15 to 20 minutes, or until the chocolate is fully set.
- Transfer to a container and keep frozen until ready to serve.
Notes
These banana bites are best served right from the freezer. Keep them in an airtight container in the freezer, where they will last for about a month. Tips: Use ripe but firm bananas for the best flavor and texture. For a fun twist, try using almond butter or sunflower seed butter instead of peanut butter.
